Honduras
From the hills of Copán in western Honduras, this organic coffee is grown by smallholder families working together through the Aproccor association. Cherries are hand-picked at peak ripeness and delivered to a centralized wet mill for careful selection, flotation, and hand-sorting. The coffee is fully washed, fermented, and slowly dried on patios and shaded raised beds to ensure even moisture reduction and stability. Grown at approximately 1,300 meters above sea level, this lot offers reliable density and consistent performance across a range of roast profiles. The cup is warm and grounded, with notes of almond, hazelnut, chocolate, brown sugar, and dried fruit.
