From the dry hills of Madriz, Nicaragua, this coffee is produced by PROCAFE R.L., a regenerative organic cooperative rooted in care for land, livestock, and people. Grown at elevations of 900 to 1,300 meters, farmers cultivate resilient varieties including Parainema, Caturra, Catimor, Marsellesa, and local hybrids. Cherries are harvested at peak ripeness, de-pulped, and sun-dried at each producer's wet mill before final drying, resting, and preparation at Beneficio Seco PROCAFE. Careful moisture management brings the coffee to a stable 11–12%, ensuring consistency, shelf life, and dependable roast performance. The cup is warm and structured, offering notes of chocolate, toasted nuts, brown sugar, and soft dried fruit.
